Make your own healthy veggie chips at home with these easy oven-baked beet chips!

Ingredients:

  • 3-4 ea beets 
  • 1/4 c olive oil
  • 1tsp salt or celery salt 

Directions:

  • Preheat oven to 300F and line baking sheets with parchment paper. 
  • Slice beets paper thin (1/16th inch) with a mandolin or by hand. 
  • Place beets in a large bowl and pour in olive oil and salt. Toss evenly, then let beets sit in oil for 15-20 minutes. 
  • Toss the beets again, then drain off the liquid. Lay the slices in a single layer on the baking sheets. Bake for 45-60 minutes until crisp, making sure to check after 45 minutes. 
  • Let cool completely, then store in an air-tight container. 

 

Toss your chips in whatever spices you want to really make it your own!
