Ingredients:
- 3 Eggplants, sliced
- 2 large eggs, beaten
- 4 cups bread crumbs
- 1/4 cup chopped parsley
- 2 jars marinara of your choice
- 1 16oz package of Mozzarella cheese, shredded
- 1/2 cup grated parmesan
- 1/2 tsp dried basil
Directions:
- Preheat over to 350F. Line a baking sheet with aluminum foil.
- Mix parsley into bread crumbs. Dip eggplant slices in beaten egg, then in bread crumbs to coat. Place in a single layer on a baking sheet. Bake for 5 minutes. Flip then bake another 5 minutes.
- Spread spaghetti sauce to cover the bottom of a baking dish or sheet. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat layers with remaining sauce, eggplant, and cheese, ending with a cheese layer. Sprinkle basil on top. Bake for 35 minutes, or until golden brown.
