Pickling can be an easy and quick task!

 

Ingredients:

  • 6-8 pickling cucumbers or 2-4 English cucumbers, sliced
  • 1/4 bunch dill, chopped in 1 inch pieces
  • 1 small onion, sliced
  • 2 tbsp Kosher salt
  • 1.5 cup apple cider vinegar
  • 3 tbsp Sugar
  • 1 tbsp mustard seed
  • 1/2 tsp chili flake
  • 2 garlic cloves, crushes
  • 1 bay leaf

Directions

  • In a bowl toss sliced cucumbers, onions and dill with salt, let sit while preparing brine
  • In a small saucepan combine the vinegar, sugar, mustard seed, crushed garlic, bay leaves, and chili flake and bring to a boil over medium heat. Pour the simmering liquid over the cucumber mixture and stir evenly to combine. Allow to cool to room temperature and chill before serving.
