Ingredients:
- 1 lb Ground Pork
- 2 Tbsp Olive Oil
- 1 Large Yellow Onion, Diced
- 1 Red Bell Pepper, Diced
- 1 Jalapeno, Diced Fine
- 2 Tbsp Garlic, Chopped
- 1 Tbsp Cumin, Ground
- 2 Tbsp Chili Powder
- 2 Tbsp Kosher Salt
- 2 tsp Black Pepper, Ground
- 2 oz Tomato Paste
- 1 ½ C Beans (Soaked)
- 1 can Diced Tomatoes
- 1 pt Chicken Stock or Beer
- 1 C Cheddar Cheese, Shredded
- ½ C Sour Cream
- 2 ea Scallions, Sliced Thin
Preparation:
In a heavy bottomed pot or cast iron dutch oven heat the olive oil on medium high heat and brown the ground pork until crumbly and well cooked. Remove the pork, setting aside for later use, leaving behind the fat in the pot. Sweat the onion, pepper, jalepeno, and garlic in the pork fat about 5-6 minutes until tender. Add the cumin, chili powder, salt, and pepper and cook a minute until aromatic. Add the tomato paste and stir well to combine and prevent from scorching. Add the pork back to the pot, along with the drained beans, diced tomatoes, and chicken stock. Bring to a simmer and reduce heat to simmer and reduce for approximately 1 hour. Adjust the seasoning as needed.
Serve the chili in a bowl topped with sour cream, shredded cheddar cheese, and sliced scallions. This also makes a great chili for filling a baked potato.
